UsQuBa – New Scottish Restaurant & Bar At One Fullerton [CLOSED]



Derived from the Scottish Gaelic Usquebaugh word for water of life or whisky, UsQuba is a contemporary restaurant and bar dedicated to showcasing the finest in New Scottish cuisine in Singapore.

Executive Chef Guven Uyanik’s unique style and creativity of fusing French techniques with elements of Scottish produce, while focusing on the natural flavours of ingredients and adding touches of Asian influences ensures a delightful complement to local climate and palates.

Wholesome Natural Dishes Crafted With An Artisanal Touch

Chef Guven likes to surprise his guests by experimenting with different textures, using dehydrated ingredients to top off the dishes and foaming sauces to give them a lighter, cleaner flavour.

Must-tries include the refreshing starter of Orkney Islands Scallops Ceviche ($25), the extraordinary Lobster Ravioli in Lobster Bisque, UsQuBa Fish & Chips ($32) and the succulent Duet of Aberdeen Angus Beef ($56). For the ultimate indulgence, go for the Aberdeen Angus Tomahawk Beef ($198) that has been dry-aged to a loving tenderness, before it hits the grill and serve with seasonal vegetables, roasted potatoes and truffle salad.

These are not the only highlights at UsQuBa – the Baked Pigeon ($32 half / $48 whole) and Butter Poached Lobster ($58) are also culinary surprises.
