Sheraton Towers Singapore – A Seafood Fête from Norway

Enthrall your taste buds with Norwegian seafood extravaganza from 1 to 8 November 2015 at Sheraton Towers Singapore. Norway-born Guest Chef Markus Peter Dybwad, together with the culinary team at Sheraton Towers Singapore, have curated a series of menus featuring freshest and finest sea produce from the cold, deep waters of Norway.

The seafood fiesta will be split into two parts – 1 to 4 November at DOMVS The Italian Restaurant and 5 to 8 November at The Dining Table.

DOMVS The Italian Restaurant (1 to 4 November)

Indulge in a specially curated 3-course Set Lunch ($52++ per person) or a 5-course Set Dinner ($90++ per person) between 1 to 4 November. There is also an option for a 5-course White Truffle Wine Dinner ($168++ per person) on 4 November, where Chef Markus will crown Italian seafood dishes with generous shavings of Alba White Truffles.

Salmon Trout Carpaccio with Horseradish and Roe, a perfect starter. Freshness guaranteed!

Expect dishes like Steamed Norwegian Blue Mussels with White Wine and Garlic, Atlantic Cod with Lentil Ragout and Poached Egg, Monkfish with Polenta and Coffee Sauce as well as King Crab with Lasagna.

Atlantic Cod with Polenta and Sage Jus. I was told that the cod was poached instead of seared to retain the moisture. Excellent decision as the cod was moist and I could taste the freshness and sweetness of the fish.

Served alongside were a bed of creamy polenta, a ring of caramelized onion and sage jus. So good I wiped my plate clean within minutes.

Complete the meal with Panna Cotta with Lingonberry and Sago, topped with a quenelle of ice cream. Love how the lingonberries pop in your mouth.

The Dining Room (5 to 8 November)

Be treated to a smorgasbord of fresh Nordic staples with Asian flavours such as Braised Monkfish Thai-style Green Curry, Tandoori Haddock Filet with Mango Chutney and Baby Shrimp Otak with Spicy Coconut Sauce. Crustacean lovers rejoice as Greenland Prawn, King Crab, Crayfish, Oyster and Blue Mussel will be served at the ice station.

Chef Markus will also be whipping up daily specials like scallop, halibut and amberjack at the live-cooking station. Do not miss the chance to catch Chef Markus in action!

Assortment of canapés. Love the sashimi. Rich, buttery with melt in your mouth texture. The sweet scallop sashimi was the bomb. For non sashimi lovers, try the Smoked Mackerel.

If you are a fan of soups, this bowl of piping hot Lobster Bisque will definitely wow your taste buds. Rich yet not too creamy with slight hint of spices. A bowl full of crustaceans flavour.

Diners can choose either the Norwegian Lunch Buffet (Adult: $55++, Child: $27++) or the Norwegian Dinner Buffet (Adult: $78++, Child: $42++). I say go for both if you are a big eater!
